Feijoa & Lime Muffins
3 cups flour, 2 tablespoons baking powder, 1 cup caster sugar, 3 eggs, 1 ¼ cups milk, 1 ½ cups feijoas, peeled and finely chopped,
125g butter, melted and cooled
Glaze: 2 tablespoons caster sugar, 2 tablespoons orange juice, 2 limes, juice and zest.
Method
- Sift flour, baking powder and sugar into large bowl and make a well in the centre
- In a jug blend together the eggs and milk, add the feijoas. Blend into the fry ingredients folding the butter as you go
- Divide the mixture evenly between 12 well greased muffin tins
- Bake at 220?C for 15 -20 minutes until cooked
- To make the glaze, simmer the sugar, orange juice and lime juice together until the sugar has dissolved
- Stand muffins for 2 minutes before brushing with the glaze. Stand for a further 5 minutes before serving
Feijoa and Strawberry Scones
3 cups flour, 3 teaspoons baking powder, Pinch of salt, 1 large tablespoons brown sugar, 1 teaspoon mixed spice, 1 egg – mix into milk,1 ½ cups milk – fluids will depend on how much juice is in the fruits, 4 chopped and skinned feijoas, 1 cup strawberries chopped
Topping: 1 tablespoon brown sugar, 1 teaspoon mixed spice
Method:
- Sift well and combine flour, baking powder, salt and spice
- Mix in the sugar
- Use a knife to chop and blend milk and egg
- Add the fruit
- Turn onto a floured board
- Cut scone into sections
- Top with mixed sugar and spice
- Bake at 200?C for around 10-12 minutes
Serve with Feijoa and Apricot jam
